It is not easy to respect a gluten free diet, especially if you can eat gluten. It takes constant vigilance and discipline. And especially self -forgiveness when you make mistakes with your celiac kids.
When Sofia, my daughter, was diagnosed with celiac disease our family decided (…ok…I may have ‘suggested’ it) that we all go on the gluten free diet. If you live it, you understand it I was thinking.
After 2 years of keeping a strict diet, I thought we became pretty vigilant. Until this Christmas. We were shopping at the gluten free stand of a hypermarket for the same brand we usually buy at home. We wanted to make pizza so we bought the first flour we saw, recognizing the familiar brand. We did not double check the label, we did not double check the ingredients and so we ended up buying wheat contaminated flour.
Distracted by the family and friends around us, we cooked and served gluten pizza to our daughter. What happened next was interesting.
